Degustation delicacy with Chef Jason

Rosemount Hotel has a long history of embracing the crazy, whacky and quirky, so who better to team up with than Vinaceous for a tasty degustation dinner? Inspired by the amazing wines, branding and style of Vinaceous, Chef Jason has created a stunning five-course menu which, each course pairing perfectly with a curated selection of the Vinaceous portfolio. Jason’s contemporary style will shine through with the carefully crafted pairings, running from entrees through to dessert.

Hosted by the National Sales Manager for Vinaceous, Langdon Farrelly, you’ll be run through the history and philosophy of the brand, and will showcase the versatility of the whole range.

We had a chat with Head Chef Jason to discuss his inspiration for this incredible evening.

How exciting! A degustation at Rosemount Hotel in Four5Nine Bar. Tell us the inspiration for the location.

Jason: The new renovations bring a new life to the 459 bar and as the new child of our assistant venue manager Tim Smith we felt that we should marry the launch of the Vinaceous wine range and the new look together for a special night not seen at Rosemount Hotel before.

Okay, so we’ll talk about the wine and food matching in a moment. First of all, what territories and cultures feed into the food and cuisine choices on this delectable menu?

Jason: The feel of the degustation menu is European cuisines with a modern twist suiting the new wine/ cocktail bar. All produce is seasonal and locally sourced predominantly from WA.

How have you come to work with Vinaceous Wines? Give us a background on the wine-maker and what he is going for with this range and vintage?

Jason: I came to work with Vinaceous wine due to their new range with which I was taken aback with and fell in love with. I felt that we should do an event to show case this young winery and the marvellous selection with which we will be taking on at the Rosemount Hotel.

Share with us the ideas, inspiration and a little about the experience diners will discover in the matching between each food dish and wine?

Jason: The selection of food offerings were carefully selected to showcase the complexities and flavours of the paired wines so as to do them justice. This is why I chose classic dishes with a modern twist; this is reflected in the branding and range of Vinaceous wines.
