Tell us about your early days as a chef! Where was the first place you got a job making tasty food?
Started out at a small local restaurant called Seabones in Gainesville, Georgia. I started out as a dishwasher and then a salad connoisseur.
Where have you worked over the years? Any favourite places?
Heaps of places in America, mostly casinos and stuff. From Philly, to Jersey, a bunch of places. But mostly, my favourite place so far has been the Rosemount.
Any cool awards or special things to note during your time as a chef?
I won the steak sandwich competition here in WA, I think, in 2015, but mostly long employment. So for a chef, people want you around. And I haven’t been fired in a long, long time, so I guess that’s an achievement for me.
What do you love about working at Rosemount?
There’s a lot. So far, it’s been probably the funnest venue I’ve done. The people are super nice that work here. I get the vibes, man. It’s like this artist’s creation space, right? Making music and doing food, and doing all that stuff. It’s super inspiring to want to come to a place and create for people that will be into it.
What’s your favourite cuisine to cook & why?
I like the simple stuff. I grew up eating lots of Italian food. My mother was Italian, obviously, as you can tell by my looks. I really got into the last 10 years doing South American cuisine, Peruvian, just a big mix of those flavours. So light and fresh and vibrant, I think that stuff. But I love pub food, too.
If you could only eat one meal for the rest of your life, what would it be?
Pizza, New York-style pizza. It’s my great news in life.
We hear you play in a band, Belgravia, what are you guys up to?
I just played here [Rosemount Hotel] in the main room, which was cool. In December/January, we’re writing our next EP. And we just joined a label, which we’ll be announcing soon. So just writing music, having fun.
Any exciting things coming up on the menu that people should keep an eye out for?
Lots of stuff. I would say we’re just going to keep making the pizzas even funner and more delicious. Then we’ll be adding some cooler shares, a slight little class-up to make us feel good about ourselves on a rainy day, and then just keeping it nice and consistent. That’s what people can expect, just good, relatable, fun food that’s delicious.
Finally, if you could cook for any 4 people in the world throughout history & time, who would it be?
I have to say my parents, because they’re both passed away. They never actually have eaten in any of my restaurants that I’ve ran in the 18 years I’ve been doing this, so that was an unfortunate thing. Abraham Lincoln, I don’t know why. I just love his name. And the last one would have to be something like Janice Joplin, just because I feel like after the meal, we need to party. Yeah. And Janice Joplin would be the person to do it.
